#eatfreahca #soulfood dinner! Low cal-healthy and easy! 

So in an effort to eat healthier my diet has gotten pretty bland. My kids aren’t happy, sometimes I’m pretty unhappy with it…it’s all bad. So I found this website eatfresh.org and I browsed through some of the recipes until I found a couple soul food recipes that really just hit me in my soul!

I’m planning a trip to South Carolina and I have to say the part that I’m looking forward to the most is the food! I will not pretend that this rendition is just as good or that my cooking skills could ever equal that of a experienced southern chef,  but this is as close as I’m ever going to be able to get. And it’s low calories and easy! All a must for me.

So I started out with oven baked fried chicken!


Raw chicken is gross.

This is what my chicken looked like in the fridge. Pay close attention to the fact that you need to let your chicken sit in the fridge for an hour!!! I almost missed that and I would’ve been MAD!


So while that is baking, I started on my Carribean Casserole!




Here’s what that looked like for me:



It smells so freaking good.

While that is simmering, I started on the biscuits!




Now, if you’ve looked at my previous experience with biscuits….it didn’t go so well last time.

This time I’m hoping is MUCH better!!!



We shall see.


I brushed them with butter…just a little bit. I probably shouldn’t have but I did. Stop judging me.

So this is what the chicken looks like halfway done with the foil off!


I mean it’s definitely not going to be fried chicken because it’s not fried LOL but I think it’s going to be delicious it sure does smell good 😊 

So now time for the rating!!!




The “fried” chicken turned out super good! Same with the casserole aaaaand the biscuits!!!!!! Woohoo!!!! Mom for the win!!!
